Spanish Fried Rice

The best of both worlds, and our childhood favorite!

Chinese Fried Rice with Jamón is one of Spain’s most traditional dishes. Just kidding! Growing up in Spain with Chinese families, our grandparents often took Chinese dishes like fried rice and incorporated Spanish ingredients. They did this out of necessity in the early days because we didn’t have access to certain Chinese items in Spain, but over time, we grew to love and appreciate the unique dishes created out of both cultures. This Chinese Fried Rice is a perfect example of how we grew up eating and how we still cook today.

 

Ingredients:

  • 2 tablespoon of olive oil, divided
  • 20 ounces of Mercado Famous Jamón
  • About 1 cup cooked white rice (from ¼ cup dry), preferably day old
  • 1/2 cups of water 1 tablespoon light soy sauce
  • 2 - 3 eggs
  • 1/4 cups green peas
  • 1/4 cups cubed small carrots
  • 1/4 cups corn
  • Salt and pepper

 

Directions:

Step 1: Heat 1 Tbsp olive oil in a wok or nonstick pan until shining. Scramble the eggs in the pan, then remove scrambled eggs and set aside.

Step 2: In the same pan, heat 1 Tbsp of olive oil until shining, then add the cooked rice. Stir the rice constantly to make sure every piece of rice is evenly fried.

Step 3: When rice is starting to turn golden brown, reduce heat to medium and add the Jamon, peas, carrots, corn, and reserved rice and continue to stir for 1-2 minutes.

Step 4: Add light soy sauce, salt, and pepper to taste. Serve hot, room temperature, or chilled.

Fancy it up: We love adding ½ cup of grated Manchego on top of the finished fried rice and heating it in the oven or microwave for about 3 minutes. It takes the dish to another level.
