Chorizo Scrambled Eggs With Toast

What more needs to be said about scrambled eggs and toast, other than that they’re the perfect pairing for Mercado Famous’ Chorizo Ibérico? You’ll never go back to regular bacon after this.



  • 2 oz Mercado Famous’ Chorizo Iberico
  • 3 fresh eggs
  • 1 slice white bread (baguette preferred)
  • 1 Tbsp Extra Virgin Olive Oil
  • Salt
  • Pepper



Step 1: Cut Mercado Famous Chorizo into half-inch slices

Step 2: Heat the oil in a nonstick pan on medium heat. When the oil is hot, crack the eggs into the pan and stir them until they are slightly broken, about 30 seconds. Add salt and pepper to taste.

Step 3: Add the sliced Chorizo Ibérico and mix for 10 seconds.

Take the scrambled eggs out of the pan when they are still soft and juicy. Serve them on a plate with some toasted bread. Enjoy!

Tip: The key to making delicious scrambled eggs is to not overcook them. So make sure to add the chorizo when they are still wet, and take them off the heat just before they are fully cooked.

Fancy it up: Replace the toast with home fries or French fries and a side of aioli, like they do in Spain.
