Migas with Chorizo Iberico

A perfect simple recipe for brunch, lunch, or any time you want a tasty twist on your traditional scrambled eggs.

Comfort food that’s crispy, cheesy, and totally crave-worthy! Fried tortilla bits, scrambled eggs, and loads of flavor - what's not to love? Perfect for brunch, lunch, or any time you want a tasty twist on scrambled eggs. Top with Mercado Famous Chorizo Iberico, cilantro, cotija, and a little salsa for extra yum!

Ingredients:

  • 1 tbsp of unsalted butter
  • 2 tbsp of vegetable or canola oil
  • 6 (4-inch) of corn tortillas
  • 1 small yellow onion, diced (about 1 cup)
  • 1 jalapeño, seeded if desired, and diced
  • 2 garlic cloves, minced
  • ½ tbsp of ground cumin
  • Salt and black pepper
  • 6 large eggs
  • ¼ cup of whole milk
  • 1 cup of shredded cheese, such as Mexican blend or Cheddar
  • 5 oz of Mercado Famous Chorizo Iberico

Directions:

Step 1: Heat butter and 1 tbsp oil in a skillet. Tear tortillas into 1-inch pieces and fry until crispy for about 5 minutes.

Step 2: Move tortillas to one side, add remaining oil, onion, and jalapeño into the Skillet. Cook all ingredits until they get soft, then add garlic and season with cumin, salt, and pepper. Stir everything and combine with the fried tortillas.

Step 3: Whisk the 6 eggs with milk, and cheese together. Pour into the pan, scramble gently until eggs are set but slightly runny for about 7 minutes.

Step 4: Serve with full or chopped pieces from Mercado Famous Chorizo Iberico, together with red onion, cotija, cilantro, and salsa if desired.

Fancy it up: if you have access to truffle or truffle oil, we recommend shaving 7-10 grams of black truffle on top of the Migas or drizzle approxmiately 1 tbs of truffle infused extra virgin olive oil. You will not regrets this
