Congee with Jamón Iberico is the ultimate comfort food with a special touch - perfect for celebrating Lunar New Year or anytime you need a bowl of warmth and joy!

Celebrate Chinese New Year with a warm, savory bowl of Congee topped with Mercado Famous Jamón! This isn’t your average congee—it's got a delicious twist that’ll make you want to go back for seconds.

Ingredients:

  • 1 cup medium or long-grain white rice
  • 8 cups water
  • 1 (1-inch) piece ginger
  • 3 cloves garlic
  • 2 medium scallions
  • 1 tablespoon soy sauce or tamari
  • 1 1/2 teaspoons kosher salt, plus more to taste
  • 1 teaspoon toasted sesame oil, plus more for drizzling
  • 1/2 teaspoon ground white pepper
  • 3 oz. Mercado Famous 50% Jamón

Directions:

Step 1: Cook the rice
Rinse 1 cup of rice under cold water until the water runs clear, then toss it into a large saucepan with 8 cups of water. Bring to a boil, then reduce heat to simmer for 30-35 minutes until creamy. Stir occasionally.

Step 2: Add some flavor
While it’s cooking, slice up the ginger, garlic, and scallions. Set aside the scallion greens and Mercado Jamón for the grand finish.

Step 3: Season and simmer
Once your congee is thick and creamy, stir in soy sauce, salt, sesame oil, and white pepper. Taste and adjust seasonings if needed.

Step 4: Top it off
Serve your congee hot, topped with the reserved scallion greens, a drizzle of sesame oil, and a generous sprinkle of Mercado Famous Jamón for that savory, melt-in-your-mouth finish.
