Jamon Cold Noodle Salad
A perfect lite and delicious recipe for a quick lunch or dinner, and totally customizable with your favorite charcuterie toppings. A great mixture of fusion flavors.

A bowl of crunchy cucumbers, slurp-worthy noodles, and a spicy sesame dressing-what more could you want? Perfect for a quick lunch or dinner, and totally customizable with your fave toppings! Add a little Jamón for a savory twist!
Ingredients:
- 8 oz of rice noodles (pad Thai or vermicelli)
- 1 tbsp of avocado oil
- 4 Persian of cucumbers, sliced
- 2 scallions, thinly sliced
- 1 tbsp of sesame seeds
- Chili crisp (optional)
- 3 ounces of Mercado Famous Jamon 50% Iberico
For the sesame dressing:
- ¼ cup of tahini sauce
- 2 tbsp of rice vinegar
- 2 tbsp of tamari (or soy sauce)
- 1 tbsp of sesame oil
- 1 tbsp of sesame seeds
- 1 tsp of gochugaru (Korean chili flakes)
- ¼ tsp of sea salt
Directions:
Step 1: Cook noodles according to package instructions, then rinse the selected noodles under cold water. Toss and mix in with avocado oil.
Step 2: Smash and chop the cucumbers, then toss them with salt, and set aside.
Step 3: Mix the dressing ingredients until they are smooth and evently mixed together for running consistency. Add water to adjust consistency if needed.
Step 4: Toss the noodles with half the dressing. Arrange on a platter and top with cucumbers, scallions, sesame seeds.
Step 5: Garnish with Mercado Famous 50% Jamón Iberico, and serve with extra dressing on the side. Enjoy!
Fancy it up: we love chili crisps sauce with this dish. If you can handle a bit of spice, we recommend drizzle up to 2 tbsp of chili crisp, it will add another layer of flavors to the dish.
